What You Will Need:
For the Koftas:
- 8 spicy beef skewers made from lean mince sourced locally from British butchers. 1 or 2 for each diner.
- 1 large egg
- ½ cup of finely chopped (ideally fresh) cilantro
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 2 teaspoons onion powder
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 2 teaspoons of paprika
- 100mg of oil
For the side dish:
- 4 – 8 pita breads
- 100g Plain, greek style yoghurt
- 50g Red onion
- 1 Lemon or lime cut into wedges

How to Cook Spicy Moroccan Beef Kofta's
- First, combine the spices in a mixing bowl with 50ml of oil and mix.
- Place the beef skewers on a baking tray.
- Use a brush to apply the prepared oil to each portion. This will enhance the spices present, creating a true Morrocon taste, but also prevent them from sticking to the pan.
- Place the prepared portions onto either a preheated hot BBQ grill, an open hibachi or a gas oven grill. Preheat to 180°C (350°F) and cook for roughly 12-22 minutes. Turn them every 5-6 minutes as the meat firms and sears.
- Once they reach an internal temperature of 80°C (176°F), they should be checked to see if they have been cooked all the way through. Cut one in half and see if there is a consistent colour running through for absolute assurance.
